Jose's coffee is one that we could drink every day. The cup leads with semi-sweet chocolate, complemented by a tangerine acidity, and finishes tasting just like dried cherries. It's one of those coffees that's incredibly approachable but still has so much to offer for someone looking for nuance and complexity in the cup.

We chase sweetness when we roast, always trying to bring out as much of the coffee's natural sweetness as we can. Jose made that all too easy for us with this harvest.

Why We Love This Coffee

There’s a lot to love about José’s coffee, but we especially love the story behind it. Across coffee-growing communities, younger generations are often faced with the decision of whether to stay on the family farm or pursue opportunities in the city. When José inherited La Florida—a farm that has been in his family for generations—he chose to stay and continue building on what his family had started. He’s since invested in his education, studied coffee production and fermentation, and is working to build a future around coffee.

We found José’s coffee through Unblended Coffee, an importer doing some really meaningful work with young coffee producers in Colombia. Their work goes beyond simply finding and exporting great coffee—they’re working alongside a new generation of producers to make coffee farming a viable and exciting path forward.

That matters to us. Brothers was built around the idea that coffee is ultimately about people, and we love getting to play our small part in a chain of people investing in one another—from José and his family, to Unblended, to us, and ultimately to the people you share this coffee with.

How We Brew It

Jose's coffee is one of those coffees that is great as a batch brew but even better as a pour over.

Our Favorite Recipe

Brew Method: Pour Over

Coffee: 25g
Water: 400g
Temperature: 204–206°F
Grind: Medium-fine
Total Time: ~3:00–3:20

Start with a 50g bloom and let it rest for about 35 seconds. Pour slowly and evenly in stages until you reach 400g. We like to pour in three phases after the bloom (pour 1: to 150g, pour 2: to 250g, pour 3: to 400g).

Drink it hot and you'll notice the semi-sweet chocolate and citrus the most, but let it cool and the cherry sweetness will start to really shine.

Also Great As

Flash Chilled (same pour-over recipe, but subtract 150 grams of brewing water and place 150grams of ice in your carafe before brewing.)

Brewing Tip

We like this coffee when the chocolate is rich and the fruit is sweet. If your cup tastes bitter or dry, grind a little coarser. If it tastes thin or sour, grind a little finer.
